The Rise of Matcha

The Rise of Matcha

Matcha is a powerful and versatile green tea powder known for its unique combination of health benefits and calming energy. Unlike coffee, matcha provides a smooth, sustained energy boost thanks to its natural caffeine content paired with L-theanine, an amino acid that promotes focus and relaxation. It’s also incredibly rich in antioxidants, especially EGCG, which supports the immune system, fights inflammation, and may protect against chronic diseases. Because matcha is made from whole powdered tea leaves, you get more nutrients, fibre, and chlorophyll than with regular steeped green tea. It can support heart health, boost metabolism, and help regulate blood sugar. Beyond its health benefits, matcha is extremely versatile—you can enjoy it as a tea, latte, smoothie, or use it in baking and cooking. Preparing matcha can also become a mindful ritual, adding calm to your daily routine.

There are 3 different grades of matcha, and each variety varies massively. Here at John Street Beverage, we are working with the team at MOYA. Using their premium grade Matcha to create the perfect Matcha lattes. Their Premium Matcha is a Japanese matcha crafted from finest first-harvest leaves. Delicate, with a distinct umami flavour and creamy texture. Perfect for tea ceremonies and traditional preparation.

Ceremonial Grade Matcha

Highest quality – used in traditional Japanese tea ceremonies.

  • Colour: Bright, vibrant green
  • Flavour: Smooth, naturally sweet, umami-rich, no bitterness
  • Texture: Ultra-fine powder, silky
  • Aroma: Fresh, grassy, vegetal
  • Use: Best for drinking straight with hot water (not for lattes or baking)
  • Made from: Youngest tea leaves, hand-picked, shade-grown

Premium Grade Matcha

High quality, often used for daily drinking.

  • Colour: Bright to medium green
  • Flavour: Balanced – some sweetness and a little bitterness
  • Texture: Fine, but not as delicate as ceremonial grade
  • Use: Great for lattes, smoothies, and iced matcha
  • Made from: Slightly older leaves than ceremonial grade

Culinary Grade Matcha

Used primarily for cooking and baking.

  • Colour: Dull green to yellow green
  • flavour: More bitter and robust – designed to stand out in recipes
  • Texture: Coarser powder
  • Use: Ideal for baking, desserts, smoothies, ice cream, matcha-flavoured foods
  • Made from: Older leaves, sometimes stems included

In conclusion, matcha is much more than just a trendy green drink. If you are thinking that matcha is going to be a short-term trend, think again. Customers have slowly been gaining an appreciation for several years and now it has really reached the mainstream. And now it is customer appreciation that is developing, as the premium grades become more of an expectation. So, make sure that you offer premium as part of your menu, perhaps with a lesser expensive choice as well, as this will allow you to communicate your knowledge to your customers, instilling confidence and ensuring repeat business. There’s no doubt that matcha is much more than just a trendy green drink, it’s a time-honoured superfood that offers a unique blend of physical, mental, and emotional benefits. From its rich antioxidant content and steady energy boost to its versatility in both drinks and recipes, matcha supports a healthier lifestyle in a natural, sustainable way. Whether you’re looking to improve focus, support your wellness, or simply enjoy a mindful daily ritual, matcha is a powerful and rewarding addition to your routine.
